In particular, Greece, Turkey, and Armenia are "gray area" countries in which some people would insist they are "White" whereas others would insist they are "Asian" or "MENA" (with Turkey and Armenia being less Eurocentric than Greece).

In reality, it's a lot more complex than that. Greece certainly has a lot of White people -- a majority, in fact. But there are also a lot of Greeks of Color, given the nation's genealogical connections with North Africa, the Middle East, and other parts of Asia.

Turkey is even more heterogeneous. Sure, there are a lot of White Turks...but there are also Turks of every other shade imaginable -- again, because of the interracial Turkish marriages from a variety of the world's diasporas. There's a reason why Turkey is considered the bridge between Europe and Asia.

Armenia is a little different because its national heritage is so distinctive in terms of Armenian immigration to the United States. But I'd say that Armenia is in a similar situation as Turkey -- based on how it straddles the Eurasian subcontinent as well as the Iranian Plateau.

As far as Anne Frank -- while I'd agree with folks who point out how she would have white privilege in America if she was still alive today, that doesn't erase the religious discrimination she faced...nor does it excuse the genocide of the Jewish people and others who were targeted by the Nazis. I think Anne Frank is such a watershed cultural/historical figure because of how young she was when abducted by the Nazis along with how her surviving diary was one of the most powerful accounts we have of life for someone who would eventually perish within a concentration camp. I'm not sure what greater point they are trying to make...that we should sideline Ms. Frank from the historical narrative, in the name of equity and spotlighting less Eurocentric cultures, due to her relatively pale skin?
