It's more complicated than that. Jews are perceived to be predominantly White because very few Jewish Americans are entirely of Israeli descent. Most practicing Jews have significant amounts of European ancestry in their lineage.

There are also Jews of Color -- and yes, that includes Jewish-practicing people of Middle Eastern descent who have Persian and Arabic ancestry as part of their lineage. They are People of Color in the United States...despite the Census Bureau's longstanding refusal to recognize them as such.
