"They" or "them" is a good rule-of-thumb whenever anyone is trying to avoid misgendering another person.

But let's be honest -- "ze," "zhe," and "zir" are never going to catch on. There's probably a gender-inclusive word already in our English vernacular that could be a blanket substitution for "Sir" or "Ma'am" -- I just wish I knew what it was!
